Sunday Supper Leftover Spectacular Week Begins
Sunday Supper with a group of friends is one of my favorite ways to round out the weekend. And it presents a unique opportunity to cook a few things with enough leftovers to get creative with for lunch for the rest of the week.
This week, I’m going to go through a couple fairly simple recipes that I prepped for Sunday Supper a few weeks ago and rode through multiple lunches throughout the week.
I saw Butcher and Bee’s recipe for Roasted Sweet Potato Sandwich with Rajas Salsa in the Saveur Recipe of the Day email (if you don’t subscribe do yourself a favor and get on that list now!) and I immediately wanted to make it. My other half had eaten at Butcher and Bee earlier in the spring and had raved. Plus I had the perfect group of friends with a connection to Charleston to make it for.
This recipe is amazing assembled as the full sandwich but you can easily turn the leftover sweet potatoes and salsa into truly delicious salad toppings.
Plus it really is best lukewarm, which makes it the perfect candidate to make ahead for both lunch AND your Sunday Supper dinner party, so that you can actually enjoy being around your friends.
“Sunday Supper” Roasted Sweet Potato Sandwich
Makes two sandwiches (plus some extra toppings)
For the sweet potatoes:
- 1 pound sweet potatoes (3-4 medium sized), peeled and sliced 1⁄2" thick lengthwise
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1⁄2 tsp. ancho chile powder
- Kosher salt and freshly gound black pepper, to taste
For the salsa:
- 2 tablespoons fresh lime juice
- 2 tablespoons minced cilantro
-15 cherry tomatoes, quartered
- 6 sweet, jarred cherry peppers, thinly sliced
- 2 roasted poblano peppers, thinly sliced (try and find some pre-roasted at the store and save yourself quite a bit of time, but instructions for roasting below as well)
For assembly:
- 1⁄4 cup sour cream
- 1/2 cup cilantro leaves and tender stems
- 2 rolls, halved lengthwise (I used ciabatta rolls and they were delicious but anything resembling a hoagie will work)
Not too many steps here. Turn on the oven to 400°. While it’s heating, get out a large bowl and toss the sweet potatoes, olive oil, cumin, chile powder, salt, and pepper. Dump them onto an aluminum foil lined baking sheet (might need to use two depending on how many potatoes you’re making) and spread them out in an even layer. When the oven is hot, put the sweet potatoes in and roast them until they are cooked and brown, probably about 20 minutes, flipping them once while they cook. Set them aside to cool.
Now we’ll make some salsa. Roasting peppers isn’t really that difficult but it would save you a lot of time to buy them at the store. But if you can’t find roasted peppers… Turn your oven setting the broiler and let it get hot. Line a baking sheet with aluminum foil, place the peppers on it and drizzle with olive oil. Put the rack in the oven as close to the top as you can. Let the peppers sit under the broiler for about 10-15 minutes until they are blistered and charred. Then transfer them to a bowl and let them cool until you can handle them. Put on some gloves (you don’t want that capsaicin on your hands and in your eyes!) and peel the skin off the peppers. Cut off the tops and discard the seeds and you have freshly roasted peppers.
Once you have your peppers in order, assembling the salsa is a snap. Mix together 2 tablespoons of lime juice, minced cilantro, cherry tomatoes, roasted poblanos, salt, and pepper in a bowl. Set that aside and let the flavors meld. Again if you make it further ahead the flavors have longer to meld and will be even more flavorful!
Now make some fancy sour cream by doctoring it with a squeeze of lime juice and get ready to assemble your sandwich, which hopefully you’ve done at least once in your life. Layer the bottom half of the bread with some of the sweet potatoes in a nice layer and then top with the salsa, sour cream, a good bunch of cilantro (with the stems) and then the top of the roll.
