For my Next Trick... The Incredible Edible Egg

I wasn't really thinking about it when I was doing that first week of the challenge, but weirdly I just so happened to do salads that let me focus on a few simple "super ingredients" that are great staples to prep once and keep on hand throughout the week. 

This time around, the star was the humble hard boiled egg. Another great way to easily add a bit of heft and protein to a salad with minimal effort. You can make just one or you can make a few and they'll keep through the work week. Just be sure to keep them in an airtight container or your fridge is going to smell.  

"The Incredible Edible Egg" Salad

- Spinach

- Cucumber (sliced and quartered)

- Canned black beans

- Canned cannelini beans

- Carrot (peeled and sliced) 

- White cheddar cheese (diced)

- Hard boiled egg (peeled and sliced)

- Balsamic vinegar

- Olive oil

- Salt and pepper

Layer up some spinach and throw in the cucumber, both varieties of beans, carrot and cheese,  in whatever quantity you deem appropriate.

Now the eggs. Put however many eggs you want to make in a saucepan that is large enough for the eggs to not crowd one another. Cover them with about an inch of water so that they are fully submerged.

Bring the water to a boil over medium heat. Once the water boils, shut off the heat, cover the pot and take it off the burner. Let the eggs sit undisturbed for about 12 minutes, more or less depending on how crumbly you want the yoke to be. The longer you let the eggs sit, the crumblier the yoke is going to be but you shouldn't let them go any longer than 15 minutes really.

Transfer the eggs to a colander (Watch your hands! They're hot!) and run some cold water over them to stop the cooking. 

To peel the egg, tap it on one end with the backside of a spoon to get a crack going. Then gently peel away the shell. Slice the egg up and add it to the salad.

Note: You may want to wait to peel and add the egg until just before you're ready to eat. And if you aren't going to use the egg right away, don't peel it. Just store it.
