Hold the Dressing!
No… literally HOLD ON to that dressing from the “Fun with Plums” Fennel Salad you made for Sunday Supper… I could not get enough of this plum situation and there was so much extra dressing that I had strained off the salad! I couldn’t resist trying another combination. And at the risk of boasting, this turned out spectacular.
The combination of plums and white carrots might seem a bit odd, but white carrots have a great sweetness to them and the contrasting crunch is very pleasing.
Trust me. You’ll want to try this.
“Plum Crazy” Salad
Makes One Salad
- 1 fresh red plum, sliced
- 1 white carrot, peeled and sliced
- 1 grilled chicken breast, diced
- Sesame seeds (optional and to taste)
- Spinach
- 3-4 tablespoons reserved dressing
Obviously this will only work if you saved the liquid from the "Fun with Plums" Fennel Salad to use as dressing. So the first step will be to make sure you did that.
Now, just quickly assemble a salad in your lunch container for a single sized portion. Add spinach, cut up a plum and a carrot and (if you want to add protein and make it a heartier meal) add a diced up grilled chicken breast.
(For the chicken, to save time, you can always buy a grilled chicken breast at most deli counters, but doing it on a grill pan at home will only take a few minutes and be a bit cheaper.)
Sprinkle some sesame seeds on top if you feel like it. Keep the dressing off until you're ready to eat at work.
