Wishing You Were Somehow Here Again...

This is not very fair of me to post because peaches are very much gone everywhere I look. And if you find them chances are they are probably not very good. I came across a few at the store the other day and they were on sale for $1.99 a pound! A steal! But they were mealy and disgusting when I bit into them.

Nonetheless, I love this salad combination. And in the off-chance you can still find decent peaches you should absolutely make it!

Otherwise this will just serve to torture you… Sorry!

“Just Peachy” Salad

Makes 1 salad (vary the proportions according to how hungry you are)

- Arugula

- Cooked farro (keep it on hand every week! Refresh on how to make it here)  

- 1 peach, sliced and quartered

- ½ shallot, sliced

- Extra sharp white cheddar cheese

- Olive oil

- Balsamic Vinegar

- Salt and pepper

Make a bed of arugula and add some pre-cooked farro. A handful should do it unless you plan on being completely famished at lunch time. Add the peach quarters and the sliced shallot (keep the other half of the shallot for use in another salad this week!). Add some cubes of sharp white cheddar cheese.

In a very small separate dressing container, quickly throw together some olive oil and balsamic vinegar with some salt and pepper and have it at the ready to dress the salad when you’re ready for it at work.
