Masochist Meatless Monday

Frankly, I’m torturing myself putting up these recipes with ingredients I can’t get anymore. I would kill someone to be able to make this sandwich again right now. It was so, SO good. Stone fruit has the perfect texture as a meat replacement. Just the right amount of flesh and bite.

This one requires no cooking whatsoever, but it really is dependent on high quality produce. If you can find good peaches and plums still, power to you. If not, maybe save this one for next year.

“Stone Fruit Soliloquy” Sandwich

Makes 1 sandwich

1 semolina roll

1 peach, sliced thin and flat

1 plum, sliced thin and flat

Mozzarella, sliced thin

Arugula

Balsamic Vinegar

Let’s assemble a mean sandwich. Slice the roll in half and place each half cut side up. Drizzle some balsamic vinegar on each half. Layer the peaches and plums so that they lay flat. Use as many as you can fit on the roll without completely overloading it and making it unmanageable to eat. Throw on a couple of slices of mozzarella. Layer some arugula on top. Slap the halves of the roll together. Cut it in half. Wrap it in some tin foil and take it to the office. Unlike when you make a sandwich with tomatoes, these fruits don’t really release that much juice, so the bread will stay nice until it’s time to unwrap and enjoy at lunch!​
